  • 1 medium zucchini – quartered into manageable pieces.
  • 1 1/2 cups chicken broth or bone broth – the primary cooking liquid for the rice.
  • Juice from 1 lemon – adds a secondary layer of acidity to the finished rice.
  • 1 1/4 cups jasmine rice – chosen for its fragrance and fluffy texture.
  • 1/2 cup chopped parsley (optional) – for a fresh garnish.
  • 1/2 cup feta (optional) – use a microbial-rennet variety for a salty finish.

step-by-step instructions

  1. Marinate the chicken: Combine the chicken pieces and all marinade ingredients in a freezer bag or airtight container. Let it sit for at least 15 minutes, or up to overnight in the refrigerator for deeper flavor.
  2. Sear the meat: Set the Instant Pot to saute mode and heat 2 tablespoons of olive oil. Once hot, add the chicken pieces (discarding the liquid marinade) and sear for 2-3 minutes per side to create a brown crust. Work in batches of 2-3 pieces to ensure the chicken sears rather than steams.
  3. Sautรฉ vegetables: Return all seared chicken to the pot and add the chopped red onion and quartered zucchini. Continue to cook for another 2-3 minutes until the vegetables begin to soften.
  4. Pressure cook: Stir in the chicken broth, lemon juice, and jasmine rice. Close the lid, ensure the valve is set to sealing, and cook on high pressure for 7 minutes.
  5. Release pressure: Use a wooden spoon to carefully turn the valve from sealing to venting for a quick pressure release.
  6. Final touches: Open the lid and stir in fresh parsley, an additional squeeze of lemon, and crumbled feta if desired.

Optimizing Your Pressure Cooker Technique

Searing in Batches to Avoid Steaming

Overcrowding the pot during the saute phase drops the temperature of the oil instantly. This causes the chicken to release moisture and steam instead of developing a golden-brown crust. Cooking in small batches ensures the surface of the meat caramelizes, which adds significant depth to the final dish.

Deglazing the Pot to Prevent Burn Errors

After searing the chicken and vegetables, small browned bits often stick to the bottom of the inner pot. Stirring the chicken broth and lemon juice thoroughly helps lift these particles, a process known as deglazing. This is critical for preventing the Instant Pot from triggering a burn notice during the pressure cycle.

Managing Liquid Ratios for Perfect Rice

Jasmine rice requires a specific ratio of liquid to achieve a fluffy consistency without becoming mushy. The 1 1/2 cups of broth combined with lemon juice provides the precise amount of hydration needed for 1 1/4 cups of rice. Avoid adding extra water, as the vegetables also release moisture during the cooking process.

The Importance of a Proper Seal

Before starting the high-pressure cycle, double-check that the silicone ring is seated correctly in the lid. A loose ring can lead to steam leaks, which prevents the pot from reaching the required pressure. This results in undercooked rice and chicken that may not be safe to consume.

Ingredient Customizations and Substitutions

Choosing the Right Chicken Cut

Chicken thighs are generally more forgiving in a pressure cooker because their higher fat content keeps them moist. If using chicken breasts, ensure they are cut into uniform 1-inch pieces to prevent the exterior from overcooking while the center remains raw. Thighs will provide a richer flavor, while breasts offer a leaner profile.

Using Brown Rice as a Hearty Alternative

If you prefer brown rice, you will need to increase the cooking time significantly, usually to 22-25 minutes on high pressure. Brown rice also requires slightly more liquid than jasmine rice to soften the outer bran layer. Adjust the broth amount by adding an extra 1/4 cup of liquid when making this swap.

Swapping Zucchini for Other Summer Squashes

Yellow squash or pattypan squash can be used as a direct replacement for zucchini. These vegetables have a similar water content and cooking time, ensuring they remain tender but not disintegrated. Keep the pieces quartered to maintain a consistent bite throughout the meal.

Incorporating Bell Peppers for Extra Color

Red or yellow bell peppers can be added alongside the onion and zucchini for additional sweetness and vitamins. Dice them into large chunks so they do not melt into the rice during the high-pressure phase. They pair exceptionally well with the oregano and lemon marinade.

Substituting Feta with Dairy-Free Alternatives

For a completely dairy-free version, replace the feta with a crumbled almond-based cheese or a tofu-based feta alternative. These options provide the same salty, tangy contrast to the lemon chicken without the use of animal products. Ensure the substitute is added only after the cooking process is complete.

Serving and Presentation Suggestions

Pairing with Hummus or Tzatziki

Adding a dollop of hummus or a side of cucumber-based tzatziki adds a creamy element to the dish. These dips complement the acidity of the lemon and the earthiness of the oregano. They also provide a cooling contrast if you decide to add extra black pepper or red pepper flakes.

Using Fresh Herbs for a Bright Finish

While dried herbs are used in the marinade for strength, fresh parsley added at the end provides a necessary brightness. Fresh mint or dill can also be stirred in just before serving for a more complex flavor profile. Always add fresh herbs after the pressure has been released to preserve their color and taste.

Assembling Healthy Meal Prep Bowls

To use this recipe for meal prep, divide the chicken and rice into airtight glass containers. You can add a handful of fresh baby spinach or sliced cucumbers to the side of the bowl. The spinach will slightly wilt when the rice is reheated, adding more greens to the meal.

Adding Kalamata Olives for Briny Flavor

Sliced Kalamata olives provide a salty, briny punch that enhances the Greek theme of the dish. Add these as a topping along with the feta and parsley. They add a sophisticated depth that balances the sweetness of the red onion.

Storage and Reheating Guidance

Airtight Fridge Storage

Store leftovers in an airtight container in the refrigerator for up to four days. Ensure the food is cooled to room temperature before sealing to prevent excessive condensation. Keeping the rice and chicken together helps the rice retain moisture during storage.

Freezing Instructions for Long-Term Use

This dish freezes well if the feta and fresh parsley are omitted before freezing. Place portions in freezer-safe bags and remove as much air as possible to prevent freezer burn. The chicken and rice will remain high quality for up to three months in the freezer.

Adding Moisture During Microwave Reheating

Rice tends to dry out when reheated in a microwave. To prevent this, sprinkle a tablespoon of water or chicken broth over the portion before heating. Cover the dish with a damp paper towel to create a steam chamber, which restores the fluffiness of the jasmine rice.

Reheating in the Oven for Better Texture

For those who prefer a slightly crisper edge on the chicken, reheat the meal in a 350ยฐF oven. Place the leftovers in a baking dish and cover with foil to prevent drying. Heat for 15-20 minutes, removing the foil for the last 5 minutes to brown the top.

Preparation and Planning Tips

Optimizing Marinating Time

While 15 minutes is sufficient for basic flavor, marinating overnight allows the acid in the vinegar and lemon to break down the muscle fibers. This results in significantly more tender chicken. Always marinate in the refrigerator to maintain food safety and prevent bacterial growth.

Efficient Pre-Chopping Strategies

To reduce active kitchen time, chop the red onion and zucchini ahead of time and store them in separate containers. Having the vegetables ready allows you to move quickly from the sautรฉ phase to the pressure cooking phase. This prevents the chicken from overcooking while you are still prepping the vegetables.

Scaling the Recipe for Large Groups

If doubling the recipe, be mindful of the total volume of your Instant Pot. Ensure the contents do not exceed the maximum fill line, especially when cooking rice, which can expand and foam. You may need to sear the chicken in more batches to maintain the proper temperature.

Choosing Organic Poultry

Using organic, free-range chicken without antibiotics often results in a cleaner taste and better texture. High-quality meat is less likely to shrink excessively during the searing process. This ensures the 1-inch pieces remain hearty and satisfying.

Common Troubleshooting Solutions

Fixing Mushy Rice

If the rice turns out too soft, it is often due to overcooking or too much liquid. To fix this, you can sautรฉ the finished rice on the saute mode for a few minutes to evaporate excess moisture. In future batches, try reducing the cook time by one minute if you prefer a firmer grain.

Resolving the Burn Notice

A burn notice usually occurs when there is a layer of burnt marinade or starch stuck to the bottom. If this happens, quick release the pressure and stir the bottom of the pot. Add a small amount of extra broth, scrape the bottom thoroughly, and restart the pressure cycle for a shorter duration.

Handling Undercooked Chicken Center

If the chicken is not fully cooked through, it is likely because the pieces were cut too large or the pot was overcrowded. Simply put the lid back on and cook for an additional 2-3 minutes on high pressure. Always use a meat thermometer to ensure the chicken reaches an internal temperature of 165ยฐF.

Adjusting for Non-Jasmine Rice

Using standard long-grain white rice instead of jasmine can change the texture. Long-grain rice may require a slightly longer cook time or a tiny bit more liquid. If using a different white rice, reduce the cook time by 1-2 minutes if it is a faster-cooking variety to avoid overcooking.

Frequently Asked Questions

Can I use chicken breasts instead of thighs?

Yes, chicken breasts work well, but they can dry out more easily. To prevent this, ensure they are cut into uniform 1-inch pieces and do not over-sear them before the pressure cooking phase.

Is this recipe suitable for a dairy-free diet?

This recipe is naturally dairy-free as long as you omit the feta cheese. If you want a salty topping, you can use a plant-based feta alternative or a sprinkle of nutritional yeast.

Can I add other vegetables to the pot?

Yes, carrots, cauliflower, or bell peppers are great additions. Add them during the sautรฉ phase with the onion and zucchini, ensuring they are cut into large pieces so they don’t become too soft.

Do I have to sear the chicken first?

Searing is optional but highly recommended for flavor. Searing creates a Maillard reaction that adds a savory depth that cannot be achieved through pressure cooking alone.

How do I prevent the rice from sticking to the bottom?

The best way to prevent sticking is to stir the rice into the liquid thoroughly. Ensure no grains are clumped together and that the bottom of the pot is completely deglazed after sautรฉing the chicken and vegetables.
