Description

Instructions

  1. Prepare Oven and Pan: Preheat oven to 350ยฐF (175ยฐC). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar (1/2 cup), baking powder, and salt.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, oil, eggs, and vanilla extract until smooth.
  4. Mix Batter and Add Strawberries: Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in the diced fresh strawberries, being careful not to overmix.
  5. Prepare Pistachio Swirl: In a small bowl, combine finely ground pistachios, granulated sugar (2 tablespoons), melted butter, and cardamom to form a thick paste.
  6. Layer and Swirl: Spread two-thirds of the batter into the prepared pan. Dollop spoonfuls of the pistachio mixture over the batter, then top with the remaining batter. Use a knife to gently swirl the layers.
  7. Bake Loaf: Bake for 55-65 minutes, or until a skewer inserted into the center comes out with moist crumbs. If the top browns too quickly, tent loosely with aluminum foil for the last 15-20 minutes.
  8. Cool Completely: Let the loaf cool in the pan for 15 minutes before transferring to a wire rack to cool completely before glazing.
  9. Prepare and Apply Glaze: Whisk powdered sugar with 1-2 tablespoons of milk or water to make a pourable glaze. Drizzle over the cooled loaf and sprinkle with reserved pistachios for garnish.
