Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar (for batter)
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 1/2 cup whole milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, hulled and diced
- 1/2 cup unsalted pistachios, finely ground (for swirl)
- 2 tablespoons granulated sugar (for swirl)
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon ground cardamom
- 1/2 cup powdered sugar (for glaze)
- 1–2 tablespoons milk or water (for glaze)

Instructions
- Prepare Oven and Pan: Preheat oven to 350ยฐF (175ยฐC). Grease and flour a 9×5 inch loaf pan, or line it with parchment paper.
- Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar (1/2 cup), baking powder, and salt.
- Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, oil, eggs, and vanilla extract until smooth.
- Mix Batter and Add Strawberries: Pour wet ingredients into dry ingredients and mix gently until just combined. Fold in the diced fresh strawberries, being careful not to overmix.
- Prepare Pistachio Swirl: In a small bowl, combine finely ground pistachios, granulated sugar (2 tablespoons), melted butter, and cardamom to form a thick paste.
- Layer and Swirl: Spread two-thirds of the batter into the prepared pan. Dollop spoonfuls of the pistachio mixture over the batter, then top with the remaining batter. Use a knife to gently swirl the layers.
- Bake Loaf: Bake for 55-65 minutes, or until a skewer inserted into the center comes out with moist crumbs. If the top browns too quickly, tent loosely with aluminum foil for the last 15-20 minutes.
- Cool Completely: Let the loaf cool in the pan for 15 minutes before transferring to a wire rack to cool completely before glazing.
- Prepare and Apply Glaze: Whisk powdered sugar with 1-2 tablespoons of milk or water to make a pourable glaze. Drizzle over the cooled loaf and sprinkle with reserved pistachios for garnish.
Notes
To achieve a tender loaf, avoid overmixing the batter; a few lumps are fine. Ensure the loaf is completely cooled before glazing to prevent the glaze from running off. The unglazed loaf can be frozen for up to 3 months.
