  • 2 tbsp (30 ml) neutral oil
  • 1 tbsp (15 g) cornstarch
  • 1 tsp (5 g) garlic powder

  • 1.5 tsp (7 g) fine sea salt
  • 0.5 tsp (2 g) freshly ground black pepper
  • 5 dried guajillo chiles, stems and seeds removed
  • 0.75 cup (180 ml) honey
  • 0.25 cup (60 ml) fresh lime juice
  • 2 tbsp (30 ml) apple cider vinegar
  • 0.5 tsp (2 g) cayenne pepper
  • 1 tsp (5 g) fresh cilantro, finely chopped (for garnish)
  • Extra lime wedges (for serving)

Instructions

  1. Preheat Oven and Season Wings: Preheat oven to 400ยฐF (200ยฐC). Line a large baking sheet with parchment paper. Pat the chicken wings thoroughly dry using paper towels. In a large bowl, toss the dried wings with 2 tbsp neutral oil, 1 tbsp cornstarch, 1 tsp garlic powder, 1 tsp onion powder, 1.5 tsp fine sea salt, and 0.5 tsp black pepper until every piece is evenly coated.
  2. Bake Wings Until Crispy: Arrange the seasoned wings in a single layer on the prepared baking sheet, ensuring space between each piece. Bake for 45-55 minutes, flipping the wings halfway through at the 25-minute mark, until they are deeply golden brown and crispy.
  3. Prepare Guajillo-Lime Glaze: While the wings are baking, place the deseeded guajillo chiles in a heatproof bowl and cover them with 0.5 cup hot water; steep for 15 minutes until soft. Drain the chiles, reserving the soaking liquid. Transfer the softened chiles, 0.75 cup honey, 0.25 cup fresh lime juice, 2 tbsp apple cider vinegar, 0.5 tsp cayenne pepper, and a pinch of salt to a blender. Blend until completely smooth, adding reserved soaking liquid one tablespoon at a time if the glaze is too thick.
  4. Toss and Caramelize Glazed Wings: Once the wings are fully cooked, transfer them to a clean large bowl. Pour about two-thirds of the prepared glaze over the wings and toss until every piece is evenly coated. Return the glazed wings to the baking sheet and bake for an additional 8-10 minutes, or broil for 2-3 minutes; watch carefully during broiling to prevent burning.
  5. Serve and Garnish: Transfer the finished wings to a platter. Drizzle generously with the remaining one-third of the glaze and garnish with chopped fresh cilantro and fresh lime wedges. Serve immediately.
