Instructions
- Cook Pasta: Cook pasta according to package directions in a large pot, until al dente (about 8-10 minutes). Before draining, reserve 1 cup (240 ml) of the starchy pasta water.
- Sautรฉ Garlic: While the pasta cooks, melt 2 tablespoons (28g) unsalted butter in a 10-inch skillet over medium heat. Add 4 cloves (1 tablespoon) minced garlic and cook until it smells fragrant and aromatic (about 1 minute); be careful not to let it brown, or it will taste bitter.
- Simmer Cream: Pour in 2 cups (480 ml) heavy cream and bring it to a gentle simmer, whisking occasionally until small bubbles appear at the edges (3-5 minutes).
- Add Cheese and Seasoning: Gradually whisk in 1 cup (100g) grated Parmesan cheese until it is completely melted and the sauce looks smooth. Stir in 1.5 tablespoons of the Cajun seasoning blend.
- Incorporate Peppers: Add 0.5 cup (75g) sliced roasted red peppers. Continue to simmer gently for 2-3 minutes, allowing the sauce to thicken slightly and the flavors to meld.
- Combine and Adjust: Add the drained pasta to the sauce, tossing to coat every strand beautifully. If the sauce seems too thick, add reserved pasta water a tablespoon at a time until you reach your desired creamy consistency.
Notes
For a lighter sauce, use half-and-half or whole milk. For dairy-free, use plant-based cream and nutritional yeast. Increase heat with cayenne or hot sauce.
