- 2 garlic cloves, minced
- 200g (7oz) diced tomatoes, drained
- 50g (ยผ cup) Kalamata olives, sliced
- 2 tbsp (30ml) capers, rinsed
- 30g (2 tbsp) spinach, chopped
- 150ml (ยฝ cup) heavy cream
- 1 roasted red bell pepper (100g / ยฝ cup, pureed)
- 1 tsp (5ml) lemon juice
- 1 tbsp (15ml) fresh basil, chopped
- 2 tbsp (15g) pine nuts, toasted
Instructions
- Prepare Cod: Season cod with salt, pepper, and paprika; drizzle with oil.
- Bake Cod: Bake at 200ยฐC (400ยฐF) for 12-15 minutes, until flaky.
- Sautรฉ Aromatics: Sautรฉ onion until translucent, then add garlic until fragrant.
- Build Tuscan Sauce: Add tomatoes, olives, and capers; simmer for 5 minutes.
- Incorporate Spinach & Cream: Stir in spinach and cream; simmer for 2-3 minutes.
