- 1 cup (150g) frozen peas and carrots
- 2 large eggs
- 2 Tbsp (30ml) vegetable oil
- 2 Tbsp (30ml) light soy sauce
- 1 Tbsp (15ml) oyster sauce
- 1 tsp (5ml) sesame oil
- 1 tsp (5g) ground turmeric
- ยฝ tsp (2.5g) ground white pepper
- 2 cloves garlic, minced
- 1 small onion, diced
- ยผ cup (15g) fresh cilantro, chopped
- 2 Tbsp (30g) plain Greek yogurt
- 1 Tbsp (15ml) fresh lime juice
- 1 Tbsp (15g) toasted sesame seeds
- 1 Tbsp (15g) crispy fried shallots (optional)
Instructions
- Prepare Rice: Use day-old jasmine rice for best texture.
- Make Crema: Whisk yogurt, lime juice, and cilantro.
- Sautรฉ Aromatics: Stir-fry onion and garlic until fragrant.
- Cook Chicken: Add chicken and stir-fry until browned.
- Scramble Eggs: Scramble eggs and mix with chicken.
- Add Rice & Seasonings: Stir-fry rice with turmeric, soy sauce, oyster sauce, sesame oil, and pepper.
- Incorporate Veggies: Add peas and carrots during the last minutes.
- Finish with Crema: Gently fold in half of the crema.
- Plate & Garnish: Serve with remaining crema, sesame seeds, and cilantro.
