Instructions

  1. Roast Red Pepper: Preheat oven to 400ยฐF (200ยฐC). Roast red pepper on a baking sheet for 25-30 minutes, turning every 10 minutes, until blistered and charred. Transfer to a bowl, cover tightly, and steam for 10-15 minutes. Once cooled, peel the skin, remove the stem and seeds, and pat the flesh dry.
  2. Prepare Aioli Base: In a food processor, combine the roasted pepper flesh, egg yolk, lemon juice, Dijon mustard, and smoked paprika. Blend until the mixture is completely smooth and uniform.
  3. Emulsify Aioli: While the food processor motor runs on low speed, slowly drizzle in the neutral oil in a steady stream until the aioli emulsifies and thickens. Season with salt and black pepper to taste. (If aioli breaks, add a new egg yolk to a clean bowl and slowly whisk in the broken mixture until emulsified.)
