Ingredients
- 1 large red bell pepper (approx. 200 g)
- 1 large egg yolk (room temperature)
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard

- 1/2 cup neutral oil (e.g., grapeseed, sunflower)
- 1 pound (450 g) imitation crab sticks (surimi), thawed
- 1/2 cup (70 g) finely diced celery
- 1/4 cup (40 g) finely diced red onion

- 2–4 sub rolls or hoagie rolls

Instructions
- Roast Red Pepper: Preheat oven to 400ยฐF (200ยฐC). Roast red pepper on a baking sheet for 25-30 minutes, turning every 10 minutes, until blistered and charred. Transfer to a bowl, cover tightly, and steam for 10-15 minutes. Once cooled, peel the skin, remove the stem and seeds, and pat the flesh dry.
- Prepare Aioli Base: In a food processor, combine the roasted pepper flesh, egg yolk, lemon juice, Dijon mustard, and smoked paprika. Blend until the mixture is completely smooth and uniform.
- Emulsify Aioli: While the food processor motor runs on low speed, slowly drizzle in the neutral oil in a steady stream until the aioli emulsifies and thickens. Season with salt and black pepper to taste. (If aioli breaks, add a new egg yolk to a clean bowl and slowly whisk in the broken mixture until emulsified.)
- Combine Salad Ingredients: Flake the imitation crab sticks into small pieces using your hands or a fork. In a large mixing bowl, combine the flaked crab with the finely diced celery and red onion. Add 1/2 to 2/3 cup of the prepared roasted red pepper aioli.
- Mix and Chill: Gently fold all ingredients until well combined and coated in the aioli. Cover the bowl and refrigerate the seafood salad for at least 30 minutes to allow the flavors to meld fully.
- Assemble Sandwich: Slice the sub rolls lengthwise. Line the rolls with fresh lettuce leaves and sliced tomatoes. Generously spoon the chilled seafood salad into each roll.
