- 4–5 cloves garlic, minced
- 1–2 lemons, zested and juiced
- 2 tbsp butter
- 2 tbsp olive oil
- 0.5 cup grated Parmesan cheese, plus more for serving
- 1 cup reserved pasta water
- Salt, to taste
- Black pepper, to taste
Instructions
- Boil Pasta: Bring a large pot of salted water to a rolling boil. Add spinach pasta and cook until al dente (8-10 minutes). Before draining, reserve 1 cup of pasta water. Do not overcook the pasta.
- Sautรฉ Aromatics: In a large skillet, melt butter with olive oil over medium heat (1 minute). Add minced garlic and cook until fragrant (1 minute).
- Wilt Spinach: Add fresh spinach to the skillet, tossing gently. Cook for 2-3 minutes until wilted and deep green; do not overcook.
- Combine Ingredients: Add drained pasta, 0.5 cup reserved pasta water, and lemon juice to the skillet. Toss vigorously to coat.
- Finish Sauce: Remove from heat. Stir in lemon zest and Parmesan cheese. Add more pasta water, 1 tbsp at a time, if needed for desired creamy consistency.
- Season and Serve: Taste and season generously with salt and fresh black pepper. Serve immediately, garnished with extra lemon zest and Parmesan cheese.
Notes
Substitute any long pasta (e.g., spaghetti, whole wheat, gluten-free). Frozen spinach (thawed, squeezed dry) is a good substitute. Use all olive oil for a dairy-free option. Avoid overcooking pasta (aim for al dente) and spinach (just wilted). For a sharper flavor, use Pecorino Romano instead of Parmesan.
