Description

  • 500g (1 lb) Halal Ground Beef
  • 1 Tbsp (15 ml) Olive Oil
  • 1 Large Onion, Diced (โ‰ˆ150g / 1 cup)
  • 3 Cloves Garlic, Minced
  • 1 tsp (5g) Ground Cumin
  • 1 tsp (5g) Smoked Paprika
  • ยฝ tsp (2.5g) Chili Powder
  • 1 cup (240 ml) Tomato Salsa
  • 1 cup (150g) Cooked Black Beans, Rinsed and Drained
  • 1 cup (150g) Frozen Corn Kernels, Thawed
  • 8 Small Flour Tortillas (โ‰ˆ20 cm / 8-inch)
  • 2 cups (200g) Shredded Cheddar Cheese (Halal-certified)
  • 1 cup (240 ml) Sour Cream (or Plant-Based Alternative)
  • 2 Chipotle Peppers in Adobo Sauce, Minced
  • 2 Tbsp (30 ml) Adobo Sauce
  • 1 Tbsp (15 ml) Fresh Lime Juice
  • 2 Tbsp (30g) Chopped Fresh Cilantro
  • ยฝ cup (120 ml) Vegetable Broth (optional)
  • Salt and Black Pepper to Taste

Instructions

  1. Prep Oven & Dish: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
  2. Sautรฉ Aromatics: Sautรฉ onion and garlic in olive oil until softened.
  3. Brown Beef: Brown ground beef, drain excess grease.
  4. Add Spices: Stir in cumin, paprika, chili powder, salt, and pepper.
  5. Simmer Filling: Add salsa, beans, and corn; simmer for 5 minutes.
  6. Make Chipotle Crema: Combine sour cream, chipotle peppers, adobo sauce, lime juice, and cilantro.
  7. Layer: Place tortillas, then half the beef mixture in the dish.
  8. Add Cheese & Crema: Sprinkle with cheese and swirl with chipotle crema.
  9. Repeat Layers: Repeat tortilla, beef, cheese, and crema layers.
  10. Bake: Bake for 25-30 minutes until bubbly and golden.
  11. Rest & Serve: Let rest for 10 minutes before serving, garnish with cilantro.

Assemble the casserole up to 24 hours in advance and refrigerate. Add 10-15 minutes to the baking time if baking from cold.
