- 500g (1 lb) Halal Ground Beef
- 1 Tbsp (15 ml) Olive Oil
- 1 Large Onion, Diced (โ150g / 1 cup)
- 3 Cloves Garlic, Minced
- 1 tsp (5g) Ground Cumin
- 1 tsp (5g) Smoked Paprika
- ยฝ tsp (2.5g) Chili Powder
- 1 cup (240 ml) Tomato Salsa
- 1 cup (150g) Cooked Black Beans, Rinsed and Drained
- 1 cup (150g) Frozen Corn Kernels, Thawed
- 8 Small Flour Tortillas (โ20 cm / 8-inch)
- 2 cups (200g) Shredded Cheddar Cheese (Halal-certified)
- 1 cup (240 ml) Sour Cream (or Plant-Based Alternative)
- 2 Chipotle Peppers in Adobo Sauce, Minced
- 2 Tbsp (30 ml) Adobo Sauce
- 1 Tbsp (15 ml) Fresh Lime Juice
- 2 Tbsp (30g) Chopped Fresh Cilantro
- ยฝ cup (120 ml) Vegetable Broth (optional)
- Salt and Black Pepper to Taste
Instructions
- Prep Oven & Dish: Preheat oven to 180ยฐC (350ยฐF) and grease a baking dish.
- Sautรฉ Aromatics: Sautรฉ onion and garlic in olive oil until softened.
- Brown Beef: Brown ground beef, drain excess grease.
- Add Spices: Stir in cumin, paprika, chili powder, salt, and pepper.
- Simmer Filling: Add salsa, beans, and corn; simmer for 5 minutes.
- Make Chipotle Crema: Combine sour cream, chipotle peppers, adobo sauce, lime juice, and cilantro.
- Layer: Place tortillas, then half the beef mixture in the dish.
- Add Cheese & Crema: Sprinkle with cheese and swirl with chipotle crema.
- Repeat Layers: Repeat tortilla, beef, cheese, and crema layers.
- Bake: Bake for 25-30 minutes until bubbly and golden.
- Rest & Serve: Let rest for 10 minutes before serving, garnish with cilantro.
