- 1 to 2 tablespoons butter or oil, for greasing
Instructions
- Combine Ingredients: In a medium bowl, combine sourdough discard, milk, all-purpose flour, sugar, and 0.5 teaspoon pink salt. Gently mix until just combined and mostly smooth (a few small lumps are fine).
- Rest Batter: Cover the bowl loosely with a clean towel and let the batter rest at room temperature for 15 to 30 minutes.
- Prepare Griddle: Preheat a non-stick griddle or 10-inch cast iron pan over medium-low heat (around 300ยฐF/150ยฐC). Lightly grease the surface with butter or oil.
- Cook Crumpets: Pour 0.25 cup of batter per crumpet into crumpet rings (if using) or freehand circles onto the griddle, allowing space between them.
