- 500g ground beef (80/20)
- 300g onion (1 large chopped, 1 large sliced)
- 2 cloves garlic, minced
- 150g carrots, diced
- 100g celery, diced
- 400g diced tomatoes
- 250ml vegetable broth
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 0.5 tsp sweet paprika
- Salt & pepper to taste
- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 300ml whole milk
- 150g shredded cheddar cheese
- 2 tbsp grated Parmesan cheese (optional)
- 100g panko breadcrumbs
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat & Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a 9-inch baking dish.
- Caramelize Onions: Slowly cook sliced onion in oil & butter until golden brown (15-20 mins).
- Sautรฉ Aromatics: Sautรฉ chopped onion, garlic, carrots, and celery until softened (5-6 mins).
- Brown Beef: Brown ground beef, drain fat, and stir in cumin, paprika, salt & pepper.
- Simmer Sauce: Add tomatoes, tomato paste, and broth; simmer for 10 mins.
- Make Paprika Cream: Melt butter, whisk in flour, then milk & paprika; simmer until thickened. Fold in caramelized onions.
- Assemble Casserole: Spread beef mixture in dish, top with cheese.
- Create Swirl: Drop cream spoonfuls over cheese and swirl gently.
- Bake: Sprinkle with panko and bake for 35-40 mins until golden.
- Rest & Serve: Let rest for 10 mins, garnish with parsley.
Notes
For a richer flavor, use beef broth instead of vegetable broth. Don’t rush caramelizing the onions โ low and slow is key.
