Description

This Smoky Paprika Swirl Cattle Drive Casserole is a comforting dish featuring savory ground beef and a rich, smoky paprika-infused cream swirl. It’s perfect for a cozy night in or a family gathering.


Ingredients

  • 500g ground beef (80/20)
  • 300g onion (1 large chopped, 1 large sliced)
  • 2 cloves garlic, minced
  • 150g carrots, diced
  • 100g celery, diced
  • 400g diced tomatoes
  • 250ml vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp sweet paprika
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 300ml whole milk
  • 150g shredded cheddar cheese
  • 2 tbsp grated Parmesan cheese (optional)
  • 100g panko breadcrumbs
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat & Prep: Preheat oven to 180ยฐC (350ยฐF) and grease a 9-inch baking dish.
  2. Caramelize Onions: Slowly cook sliced onion in oil & butter until golden brown (15-20 mins).
  3. Sautรฉ Aromatics: Sautรฉ chopped onion, garlic, carrots, and celery until softened (5-6 mins).
  4. Brown Beef: Brown ground beef, drain fat, and stir in cumin, paprika, salt & pepper.
  5. Simmer Sauce: Add tomatoes, tomato paste, and broth; simmer for 10 mins.
  6. Make Paprika Cream: Melt butter, whisk in flour, then milk & paprika; simmer until thickened. Fold in caramelized onions.
  7. Assemble Casserole: Spread beef mixture in dish, top with cheese.
  8. Create Swirl: Drop cream spoonfuls over cheese and swirl gently.
  9. Bake: Sprinkle with panko and bake for 35-40 mins until golden.
  10. Rest & Serve: Let rest for 10 mins, garnish with parsley.

Notes

For a richer flavor, use beef broth instead of vegetable broth. Don’t rush caramelizing the onions โ€“ low and slow is key.
