- 2 Cloves Garlic, Minced
- 200 g (7 oz) Shredded Provolone Cheese
- 200 ml (ยพ cup) Heavy Cream
- 100 ml (โ cup) Low-Sodium Vegetable Broth
- 1 tsp Smoked Paprika
- ยฝ tsp Chipotle Powder
- ยฝ tsp Salt
- ยผ tsp Black Pepper
- 2 tbsp (28 g) Unsalted Butter
- 1 tbsp (8 g) All-Purpose Flour
- 2 tbsp (30 ml) Roasted Red-Pepper Purรฉe
- 2 tsp (5 g) Fresh Chives, Chopped
- 1 tsp (2 g) Fresh Thyme Leaves (Optional)
Instructions
- Cook Tortellini: Boil tortellini until al dente, drain, and set aside.
- Sear Beef: Season beef with paprika, salt, and pepper; sear in olive oil until browned.
- Sautรฉ Vegetables: Sautรฉ onion and bell pepper until softened; add garlic during the last minute.
- Meld Flavors: Return beef to skillet with vegetables; simmer in broth for 2 minutes.
