Ingredients

  • 1.5 kg oxtail
  • 2 tbsp vegetable oil
  • 150 g onion, diced
  • 120 g carrots, chunked
  • 80 g celery, chunked
  • 4 garlic cloves, minced
  • 2.5 cm ginger, grated
  • 250 ml beef broth
  • 250 ml water
  • 30 ml pomegranate molasses
  • 15 ml white miso paste
  • 15 ml honey
  • 5 g ground cumin
  • 5 g smoked paprika
  • Salt and pepper to taste
  • 30 ml cornstarch slurry (1 tbsp cornstarch + 2 tbsp water)
  • 15 g toasted sesame seeds
  • 8 g chopped cilantro

Instructions

  1. Prepare Oxtail: Pat oxtail dry and season with salt and pepper.
  2. Sear Oxtail: Sear oxtail in batches until browned on all sides.
  3. Sautรฉ Aromatics: Sautรฉ onion, carrots, and celery until softened.
  4. Bloom Spices: Add garlic, ginger, pomegranate molasses, miso, honey, cumin, and paprika; cook briefly.
  5. Deglaze & Combine: Add beef broth and water, scraping up browned bits.
  6. Slow Cook: Combine all ingredients in a slow cooker; cook on low for 8 hours or high for 4 hours.
  7. Finish Sauce: Remove oxtail; skim fat from liquid; boil and thicken with cornstarch slurry.
  8. Serve: Arrange oxtail, glaze, sesame seeds, and cilantro.
