- 10 ounces pre-washed baby spinach

- Freshly ground black pepper, to taste
Instructions
- Prep Greens: Thoroughly rinse fresh spinach under cold water. Use a salad spinner or gently pat dry with paper towels to remove all excess moisture.
- Build Gloss: Heat 2 tablespoons of olive oil in a large 12-inch skillet or wok over medium heat until it shimmers. Add the minced garlic and red pepper flakes. Sautรฉ for about 30-60 seconds, stirring constantly, until the garlic is fragrant and lightly golden.
- Wilt Spinach: Add the dry spinach to the skillet. Using tongs, toss the spinach continuously until all the leaves are bright green, tender, and beautifully wilted. Season generously with salt and pepper to taste as it cooks.
