  • 30 ml fresh lime juice, plus more

Instructions

  1. Prep the Vegetables: Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper. Arrange tomatoes, onion, garlic, and jalapeños. Drizzle evenly with olive oil and sprinkle with sea salt.
  2. Roast to Perfection: Place the baking sheet in the preheated oven. Roast until tomatoes are softened and slightly charred, onion is tender, and jalapeños are blistered (25-30 minutes).
  3. Cool Slightly: Remove roasted vegetables from the oven. Let them cool down for a few minutes, making them easier to handle.
  4. Prepare for Blending: Once cool enough, peel garlic skin. For less heat, remove stems and most seeds from jalapeños; leave some for more spice.
  5. Blend to Your Liking: Transfer roasted tomatoes, onion, peeled garlic, and jalapeños to a food processor. Add fresh cilantro and lime juice. Pulse until chunky but well combined, or blend longer for smoother consistency. (If your salsa looks too watery, drain some excess liquid from the roasted tomatoes before blending.)
  6. Season and Taste: Pour the delicious roasted tomato salsa into a serving bowl. Taste and adjust salt and lime juice as needed for brightness.

Notes
