Ingredients

  • 4 chicken thighs (bone-in, skin-on, 800g)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.5 tsp ground cumin
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 0.5 cup low-sodium chicken broth
  • 0.25 cup pomegranate molasses
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 2 tbsp fresh mint, chopped
  • 2 tbsp toasted pine nuts
  • 0.5 lemon zest (optional)

Instructions

  1. Season Chicken: Combine spices and season chicken thighs.
  2. Sear Chicken: Sear chicken skin-side down for 5-6 minutes, then flip and sear for 3-4 minutes.
  3. Sautรฉ & Deglaze: Sautรฉ garlic, then deglaze pan with chicken broth.
  4. Make Glaze: Simmer pomegranate molasses, lemon juice, and honey.
  5. Glaze & Bake: Return chicken to pan, glaze, and bake for 10-12 minutes.
  6. Caramelize: Baste with remaining glaze and cook uncovered for 2-3 minutes.
  7. Garnish & Serve: Sprinkle with mint and pine nuts; serve immediately.
