  • 20ml Heavy Cream

  • 4g Thyme Leaves
  • 10g Butter
  • 6g All-Purpose Flour
  • 120ml Vegetable Broth
  • 3ml Lemon Juice (for sauce)
  • 1g Chives, chopped
  • 1g Lemon Zest (for garnish)

Instructions

  1. Preheat & Prep: Preheat oven to 200ยฐC (400ยฐF) and grease a muffin tin.
  2. Dehydrate Potatoes: Squeeze excess moisture from grated potatoes.
  3. Flavor Potatoes: Combine potatoes, Parmesan, olive oil, salt, pepper, garlic, and rosemary.
  4. Make Goat Cheese: Blend goat cheese, cream, lemon zest, lemon juice, and thyme.
  5. Layer Stacks: Spoon potato mixture into muffin cups, add goat cheese, and top with more potato mixture.
  6. Bake to Golden: Bake for 25-30 minutes, until golden brown and crisp.
  7. Rest & Release: Cool for 5 minutes before removing from tin.
  8. Make Sauce: Melt butter, whisk in flour, then broth; simmer until thickened.
  9. Finish Sauce: Stir in lemon juice, thyme, and season.
