Ingredients
- 500 g (1 lb) Ground Chicken, skinless
- 2 Tbsp (30 ml) Extra-Virgin Olive Oil
- 1 Medium Onion, finely chopped (โ150 g / 1 cup)
- 2 Cloves Garlic, minced
- 1 Red Bell Pepper, diced (โ150 g / 1 cup)
- 120 g (ยฝ cup) Pitted Kalamata Olives, halved
- 150 g (5 oz) Crumbled Feta Cheese
- 1 tsp Dried Oregano
- 1 tsp Smoked Paprika
- ยฝ tsp Ground Cumin
- Salt and Pepper, to taste
- Zest of 1 Lemon
- Juice of ยฝ Lemon (โ1 Tbsp / 15 ml)
- 120 g (ยฝ cup) Plain Full-Fat Greek Yogurt
- 1 Tbsp Fresh Mint, chopped
- 2 Tbsp Pine Nuts, toasted
- 1 tsp Extra-Virgin Olive Oil (for finishing)
Instructions
- Sautรฉ Vegetables: Heat olive oil in a skillet over medium-high heat. Sautรฉ onion and bell pepper for 4-5 minutes until slightly caramelized.
- Bloom Garlic: Add minced garlic and cook for 30 seconds until fragrant.
- Brown Chicken: Add ground chicken and cook for 6-8 minutes, breaking it up, until browned and cooked through.
- Season Chicken: Season with oregano, smoked paprika, cumin, salt, and pepper.
- Add Olives & Lemon: Fold in olives, lemon zest, and lemon juice. Cook for 2 minutes.
- Swirl in Yogurt: Remove from heat and swirl in Greek yogurt.
- Garnish & Serve: Top with feta, pine nuts, and mint. Drizzle with olive oil and serve immediately.
