- Diet: General
Description
This meatloaf recipe with stuffing mix is a comforting, juicy, and flavor-packed dish perfect for busy weeknights and family dinners. It features a creamy herb-garlic filling and a sweet and tangy glaze, making it a delicious and satisfying meal with minimal effort.
Ingredients
- 2 lb lean ground beef
- 6 oz dry bread stuffing mix, herb-seasoned (or gluten-free)
- 2 large eggs, lightly beaten
- 0.75 cup whole milk
- 1 small yellow onion, very finely diced
- 2 cloves garlic, minced (for meatloaf)
- 1 tablespoon soy sauce
- 1 teaspoon apple cider vinegar (for meatloaf mixture)
- 1 teaspoon salt (for meatloaf mixture)
- 0.5 teaspoon black pepper (for meatloaf mixture)
- 8 oz full-fat cream cheese, softened
- 0.25 cup fresh parsley, finely chopped (for filling)
- 2 tablespoons fresh chives, finely chopped (for filling)
- 1 clove garlic, minced (for filling)
- 0.5 teaspoon salt (for filling)
- 0.25 teaspoon black pepper (for filling)
- 0.5 cup ketchup
- 2 tablespoons light brown sugar, packed (or sugar-free alternative)
- 1 tablespoon apple cider vinegar (for glaze)
- 1 tablespoon fresh parsley, finely chopped (for garnish)
Instructions
- Preheat Oven & Prep Pan: Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a 9 x 5 inch loaf pan, preparing it for the layers.
- Mix Meatloaf Base: In a large bowl, combine the ground beef, dry bread stuffing mix, beaten eggs, milk, onion, 2 minced garlic cloves, soy sauce, 1 tsp apple cider vinegar, 1 tsp salt, and 0.5 tsp black pepper. Mix gently with your hands until just combined; do not overmix (the mixture should still be somewhat loose; if crumbly, gently add 1-2 tablespoons more milk).
- Prepare Creamy Filling: In a separate small bowl, combine the softened cream cheese, finely chopped fresh parsley, finely chopped fresh chives, 1 minced garlic clove, 0.5 tsp salt, and 0.25 tsp black pepper. Stir until smooth and well combined (it should be easily spreadable).
- Assemble Meatloaf Layers: Press half of the meatloaf mixture evenly into the bottom of the prepared loaf pan, forming a solid base layer. Carefully spread the entire cream cheese filling mixture over the meatloaf base, leaving a small border. Gently top with the remaining meatloaf mixture, spreading it out evenly to cover the cream cheese layer completely and seal the edges securely.
- Bake Initial & Glaze Prep: Bake for 45 minutes, until the top begins to firm and lightly brown. While it bakes, whisk together the ketchup, light brown sugar, and 1 tbsp apple cider vinegar in a small bowl to create the glaze (it should be smooth and ready to spread).
- Glaze & Finish Baking: After 45 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160ยฐF (71ยฐC) and the glaze is bubbly and slightly caramelized.
- Rest & Serve: Remove the meatloaf from the oven and let it rest in the pan for 10-15 minutes, allowing the juices to redistribute for a tender slice. Carefully drain any excess fat before transferring it to a cutting board. Slice into thick, even slices to reveal the creamy herb-garlic layer and garnish with fresh parsley.
Notes
Avoid overmixing the meatloaf mixture to prevent a dry or tough texture, and always use a meat thermometer to ensure proper doneness without overbaking. For quicker cooking or individual servings, shape the mixture into mini meatloaves, which typically bake in 30-40 minutes. You can substitute ground turkey or chicken for a leaner meal, or use gluten-free stuffing mix for a dietary adaptation. Consider adding grated zucchini or carrots for extra nutrients and to stretch the meal further.
