Description
These Lemon Zest Cream Cheese Swirl Blueberry Muffins combine tangy lemon, creamy cream cheese, and juicy blueberries for an irresistible flavor. Perfect for brunch or a sweet treat, they deliver a moist, tender crumb and a beautiful swirl.
Ingredients
- 250g (2 cups) All-Purpose Flour, sifted
- 150g (3/4 cup) Granulated Sugar
- 2 tsp Baking Powder
- ยฝ tsp Baking Soda
- ยผ tsp Salt
- 120ml (ยฝ cup) Whole Milk
- 80ml (โ cup) Melted Unsalted Butter
- 1 Large Egg, room temperature
- 1 tsp Vanilla Extract
- 150g (1 cup) Fresh Blueberries, rinsed and dried
- 100g (3ยฝ oz) Cream Cheese, softened
- 30g (2 tbsp) Powdered Sugar (for swirl)
- Zest of 1 Lemon (about 1 tsp)
- 1 tsp Lemon Juice (for swirl)
- 30g (2 tbsp) Powdered Sugar (for glaze)
- 1 tsp Lemon Juice (for glaze)
- 15g (1 tbsp) Toasted Almond Slivers, for garnish
- A few extra fresh blueberries, for garnish
Instructions
- Preheat & Prepare: Preheat oven to 180ยฐC (350ยฐF) and line a muffin tin with liners.
- Combine Dry Ingredients: Whisk flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: Beat milk, melted butter, egg, and vanilla extract.
- Combine Wet & Dry: Gently stir wet into dry ingredients until just combined.
- Fold in Blueberries: Gently fold in blueberries.
- Prepare Cream Cheese Swirl: Beat cream cheese, powdered sugar, lemon zest, and lemon juice.
- Assemble Muffins: Spoon batter into cups, add cream cheese swirl, then top with more batter.
- Create Swirl: Gently swirl batters together.
- Bake to Perfection: Bake for 20-22 minutes, until a toothpick comes out clean.
- Cool & Glaze: Cool in tin for 5 minutes, then on a wire rack; glaze with lemon sugar.
- Glaze & Garnish: Drizzle glaze and sprinkle with almonds and blueberries.
Notes
For a lighter texture, sift the flour and avoid overmixing the batter. Room temperature ingredients emulsify better, creating a smoother batter.
