- 2 Large Eggs
- 0.5 cup Cream Cheese, softened
- 1 tsp Vanilla Extract
- 0.25 cup Lemon Juice (for curd)
- 0.25 cup Granulated Sugar (for curd)
- 2 tbsp Unsalted Butter (for curd)
- 1 tbsp Cornstarch slurry (1 tsp cornstarch + 1 tbsp Water)
- Powdered Sugar (optional)
- Extra Lemon Zest (optional)
Instructions
- Preheat & Prep: Preheat oven to 375ยฐF and line a muffin tin with liners.
- Make Lemon Curd: Simmer lemon juice, sugar, and butter until thickened.
- Thicken Curd: Stir in cornstarch slurry and cook until coating consistency. Cool completely.
- Combine Dry: Whisk flour, sugar, baking powder, baking soda, salt, and zest.
- Combine Wet: Beat cream cheese, eggs, milk, butter, lemon juice, and vanilla.
- Combine Mixtures: Gently fold wet into dry until just combined.
- Fill Liners: Spoon batter into liners, creating a well in each.
- Add Curd: Drop lemon curd into the wells.
- Top with Batter: Cover curd with remaining batter.
- Bake: Bake for 18-20 minutes, until golden brown.
- Cool & Finish: Cool in tin, then transfer to rack. Drizzle with curd and dust with sugar/zest.
