  • 0.25 cup Granulated Sugar (for curd)
  • 2 tbsp Unsalted Butter (for curd)
  • 1 tbsp Cornstarch slurry (1 tsp cornstarch + 1 tbsp Water)
  • Powdered Sugar (optional)
  • Extra Lemon Zest (optional)

Instructions

  1. Preheat & Prep: Preheat oven to 375ยฐF and line a muffin tin with liners.
  2. Make Lemon Curd: Simmer lemon juice, sugar, and butter until thickened.
  3. Thicken Curd: Stir in cornstarch slurry and cook until coating consistency. Cool completely.
  4. Combine Dry: Whisk flour, sugar, baking powder, baking soda, salt, and zest.
  5. Combine Wet: Beat cream cheese, eggs, milk, butter, lemon juice, and vanilla.
  6. Combine Mixtures: Gently fold wet into dry until just combined.
  7. Fill Liners: Spoon batter into liners, creating a well in each.
  8. Add Curd: Drop lemon curd into the wells.
  9. Top with Batter: Cover curd with remaining batter.
  10. Bake: Bake for 18-20 minutes, until golden brown.
  11. Cool & Finish: Cool in tin, then transfer to rack. Drizzle with curd and dust with sugar/zest.
