  • 2 medium scallions, thinly sliced
  • 1 lime, cut into wedges

Instructions

  1. Prep Shrimp: Pat the jumbo shrimp very dry with paper towels to ensure a good sear, then set aside.
  2. Whisk Glaze Ingredients: Whisk together gochujang, tamari, brown sugar, minced ginger, 3 cloves minced garlic, and toasted sesame oil to create the glaze, then set aside.
  3. Prepare Crispy Garlic: Heat 30 ml (2 tablespoons) neutral oil in a small pan over medium-low heat until shimmering. Fry the thinly sliced garlic, stirring, until golden brown and crisp (about 3-5 minutes). Remove the garlic to drain on paper towels and reserve the oil.
  4. Sear the Shrimp: Heat 15 ml (1 tablespoon) neutral oil in a large skillet over medium-high heat until shimmering. Add the dried shrimp in a single layer and cook for 1-2 minutes per side until opaque, pink, and seared.
  5. Glaze the Shrimp: Reduce the heat to medium-low. Pour the prepared glaze over the shrimp and toss gently until they are evenly coated. Cook for 1-2 minutes, allowing the glaze to thicken and adhere to the shrimp.
