Ingredients

Scale
  • 250g (2 cups) All-Purpose Flour: The base of the biscuits, measure accurately.
  • 2 tsp (½ Tbsp) Baking Powder: Leavening agent for a light and fluffy texture.
  • ½ tsp Salt: Enhances all the flavors.
  • 60g (¼ cup) Unsalted Butter, Cold and Diced: Key for flaky biscuits; keep cold.
  • 120ml (½ cup) Whole Milk: Adds richness and moisture.
  • 250g (½ lb) Halal Ground Beef: The savory filling.
  • 1 Tbsp Olive Oil: For browning the beef.
  • ½ tsp Smoked Paprika: Adds smoky depth.
  • ¼ tsp Ground Cumin: Provides earthy warmth.
  • 150g (5 oz) Cheddar Cheese, Grated: Sharp, savory flavor.
  • 150g (5 oz) Mozzarella Cheese, Shredded: Adds stretch and meltiness.
  • 100g (3½ oz) Cream Cheese, Softened: Base for the zesty swirl.
  • 1 Small Jalapeño, Finely Minced: Adds a kick; remove seeds for less heat.
  • 1 tsp Lime Zest: Vibrant citrus aroma and flavor.
  • 1 tsp Lime Juice: Tangy balance.
  • 1 tsp Toasted Cumin Seeds: Garnish for crunch and flavor.
  • 1 Tbsp Chopped Fresh Cilantro: Fresh, herbaceous garnish.
  • Vegetable Oil: For greasing the baking sheet.

  1. Preheat & Prep: Preheat oven to 200°C (400°F) and grease a baking sheet.
  2. Combine Dry Ingredients: Whisk flour, baking powder, and salt in a bowl.
  3. Cut in Butter: Cut cold butter into flour until it resembles coarse crumbs.
  4. Add Milk: Gently stir in milk until a soft dough forms.
  5. Rest Dough: Cover and rest dough for 10 minutes.
  6. Brown Beef: Sauté beef with olive oil, smoked paprika, and cumin.
  7. Combine Filling: Mix browned beef with cheddar and mozzarella.
  8. Make Swirl: Blend cream cheese, jalapeño, lime zest, and lime juice.
  9. Roll & Cut: Roll dough and cut out circles.
  10. Assemble Bombs: Fill each circle with beef mixture and cream cheese.
  11. Seal & Shape: Fold, pinch, and roll into balls.
  12. Bake: Bake for 15-18 minutes, until golden brown.

Notes

For extra flaky biscuits, ensure the butter is very cold and don’t overmix the dough. Adjust jalapeño amount to control spice level.
