Instructions
- Activate Yeast: Combine 340 ml (1.33 cups) warm water (40-45C / 105-115F) and yeast. Stir gently until foamy, showing active yeast.
- Mix Dough: Add honey, oil, and salt. Gradually mix in both flours until a shaggy dough forms.
- Knead Dough: Knead by hand for 8-10 minutes, or 6-8 with a stand mixer, until the dough feels smooth and elastic. (If dough feels too sticky, add flour one tablespoon at a time.)
- First Rise: Lightly oil a bowl, place dough inside, and cover. Let rise in a warm spot until it visibly doubles in size (1-1.5 hours).
- Shape Loaf: Gently punch down dough. Roll into a 30 cm x 20 cm (12 x 8 inch) rectangle, then tightly roll into a log. Pinch the seam. Lightly grease a 9×5-inch loaf pan.
- Second Rise: Transfer dough, seam-side down, into the loaf pan. Cover and let rise until puffy and nearly doubled (30-45 minutes).
