Ingredients
- 120 g (1 cup) almond flour, fine
- 2 large eggs
- 1 tsp (5 g) baking powder
- 0.5 tsp (2.5 g) sea salt
- 30 g (2 tbsp) melted butter or olive oil
- 60 g (0.25 cup) almond butter, smooth
- 1 clove garlic, minced
- 1 tsp (5 g) rosemary, chopped
- 0.5 tsp (2.5 g) thyme, chopped
- 1 tbsp (15 ml) olive oil
- Pinch black pepper
- 15 g (2 tbsp) sliced almonds, toasted
- 2 tbsp chives, chopped
Instructions
- Preheat & Prepare: Preheat oven to 190ยฐC (375ยฐF) and line a baking sheet with parchment paper.
- Combine Wet Ingredients: Whisk eggs, melted butter/oil, salt, and baking powder.
- Incorporate Dry Ingredients: Stir in almond flour until a soft dough forms.
- Rest the Dough: Let dough rest for 5 minutes.
- Prepare Herb-Infused Swirl: Combine almond butter, garlic, rosemary, thyme, olive oil, and pepper; microwave briefly.
- Shape the Dough: Press dough into a rectangle.
- Add the Swirl: Spread almond butter mixture over dough.
- Fold & Roll: Fold dough over swirl and roll into a rope.
- Cut into Biscuits: Cut rope into 8 portions.
- Arrange & Brush: Place biscuits on baking sheet and brush with melted butter.
- Bake to Perfection: Bake for 12-15 minutes.
- Cool & Garnish: Cool on a rack and sprinkle with almonds and chives.
