- 500 g ground beef (85/15), notes
- 600 g potatoes, diced, peeled optional
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tbsp vegetable oil
- 1 tsp smoked paprika
- 0.5 tsp ground cumin
- Salt and pepper to taste
- 150 g sharp cheddar cheese, grated
- 100 g cream cheese, softened
- 60 ml whole milk
- 1 tsp fresh thyme leaves
- 1 tbsp fresh parsley, chopped
- Optional: 1 tsp toasted pine nuts
Instructions
- Sautรฉ Aromatics: Heat oil and sautรฉ onion, garlic, and bell pepper for 4-5 minutes until softened.
- Brown Beef: Add ground beef and cook until browned, seasoning with paprika, cumin, salt, and pepper.
- Combine & Cook: Add potatoes and cook for 5 minutes, coating with beef mixture.
- Bake: Transfer to a 200ยฐC (400ยฐF) oven and bake for 20 minutes, until potatoes are tender.
- Make Cheese Swirl: Microwave cheddar, cream cheese, milk, paprika, and thyme until smooth.
- Add & Bake Cheese: Drizzle cheese sauce over skillet and bake for 5 minutes, until bubbly.
- Rest & Garnish: Rest for 5 minutes, then garnish with parsley and pine nuts.

For best results, use a good quality smoked paprika and ensure potatoes are diced evenly.
