  • 2 medium tomatoes, quartered
  • ยฝ medium red onion, thinly sliced
  • ยฝ cup (75g) Kalamata olives, pitted and halved
  • 1 medium red bell pepper, sliced
  • 1 medium carrot, julienned
  • 2 tbsp (30ml) pomegranate molasses
  • 1 tbsp (15ml) honey (optional)
  • 1 tsp (5ml) smoked paprika
  • ยฝ cup (120ml) plain full-fat yogurt
  • 1 tbsp (15g) fresh mint, chopped + extra for garnish
  • 2 tbsp (30g) pine nuts, toasted

Instructions

  1. Prepare the Rice Base: Spoon cooked rice into bowls.
  2. Add the Sliced Chicken: Arrange chicken strips over rice.
  3. Layer on the Pomegranate-Glazed Vegetables: Place bell pepper and carrot alongside chicken.
  4. Incorporate the Fresh Vegetables: Add cucumber, tomatoes, red onion, and olives.
  5. Drizzle with Pomegranate Glaze: Spoon glaze over the bowl.
  6. Swirl in the Mint-Yogurt Sauce: Add yogurt sauce and swirl.
