Description
This Ginger Chicken Rice Soup is a comforting and flavorful dish inspired by Southeast Asian cuisine, featuring tender chicken, fragrant ginger, and a luscious Coconut-Lime Cream Swirl. It’s perfect for a cozy night in or when you’re feeling under the weather.

- 500g (1.1lb) Chicken Thighs, bite-sized pieces
- 1 tbsp (15ml) Vegetable Oil
- 1 Medium Onion (150g / 5oz), finely chopped
- 3cm (1.2in) Ginger (15g / 0.5oz), minced
- 2 Cloves Garlic (10g / 0.35oz), minced
- 2 Carrots (150g / 5.3oz), diced
- 100g (3.5oz) Jasmine Rice, rinsed
- 1.2L (5 cups) Low-Sodium Chicken Broth
- 2 tbsp (30ml) Soy Sauce (or Tamari)
- 1 tsp (5ml) Sesame Oil
- Salt and White Pepper, to taste
- 200ml (3/4 cup) Coconut Milk
- Zest of 1 Lime
- 1 tbsp (15ml) Lime Juice
- 1 tsp (5g) Cornstarch in 2 tbsp (30ml) Water
- Pinch of Salt (for cream)
- 1 tbsp (15ml) Toasted Coconut Flakes
- 2 tbsp (30g) Cilantro, chopped
Instructions
- Sautรฉ Aromatics: Heat oil, sautรฉ onion until translucent (3-4 minutes).
- Bloom Ginger & Garlic: Stir in ginger and garlic, cook until fragrant (30 seconds).
- Brown Chicken: Add chicken, brown for about 4 minutes.
- Toast Rice & Carrots: Add carrots and rice, toast for 1 minute.
- Simmer Soup: Add broth, soy sauce, sesame oil, salt & pepper. Simmer for 15-20 minutes.
- Prepare Cream: Combine coconut milk, lime zest, and juice; simmer.
- Thicken Cream: Stir in cornstarch slurry, cook until thickened (2-3 minutes).
- Serve & Swirl: Ladle soup, swirl in coconut-lime cream.
- Garnish & Enjoy: Drizzle sesame oil, sprinkle coconut flakes and cilantro.
Notes
For an even creamier soup, blend a portion of the soup before adding the coconut-lime cream.
