Ingredients
- 4 fillets salmon, about 150-180g (5–6 oz) each, skin on or off
- 0.25 cup extra virgin olive oil, divided
- 4 cloves garlic, minced (for crust)
- 2 teaspoons smoked paprika
- 0.5 teaspoon ground cumin
- 1 large lime, zested and juiced (for crust)
- 1 tablespoon pure maple syrup
- 1 teaspoon sea salt, plus more to taste
- 0.5 teaspoon freshly ground black pepper, plus more to taste
- 1 bunch fresh cilantro, finely chopped (about 30g / 1 cup)
- 1 clove garlic, minced very fine (for gremolata)
Instructions

- Make the Paprika-Lime Crust: In a small bowl, whisk together 3 tablespoons of the olive oil, 4 minced garlic cloves, smoked paprika, ground cumin, the juice from the large lime, maple syrup, 1 teaspoon sea salt, and 0.5 teaspoon black pepper until well combined.
