Garlic parmesan cheeseburger bombs transform classic burgers into poppable bites using store-bought biscuit dough wrapped around a ground beef filling with sharp cheddar.


Ingredients

  • 450 g (1 lb) Lean Ground Beef
  • 1 Small Yellow Onion, Finely Diced
  • 2 Cloves Garlic, Minced (for filling)
  • 15 mL (1 tablespoon) Smoked Paprika
  • 5 mL (1 teaspoon) Dried Oregano
  • 2.5 mL (1/2 teaspoon) Black Pepper and Salt
  • 230 g (8 oz) Refrigerated Biscuit Dough, 1 standard 8-count can
  • 115 g (4 oz) Sharp Cheddar Cheese, cut into 8 equal cubes or shredded
  • 60 g (4 tablespoons) unsalted butter, melted (for topping)
  • 2 cloves minced garlic (for topping)
  • 30 g (1/4 cup) grated Parmesan cheese (for topping and garnish)
  • 15 mL (1 tablespoon) fresh chives, finely chopped (for garnish)

Instructions

  1. Prep Oven and Baking Sheet: Preheat your oven to 200ยฐC (400ยฐF). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Cook Ground Beef Filling: In a large skillet over medium-high heat, cook the ground beef until browned, breaking it up with a spoon. Drain any excess fat. Add the finely diced onion and cook for 3-5 minutes until softened. Stir in the minced garlic (for the filling), smoked paprika, dried oregano, black pepper, and salt; cook for 1-2 minutes until fragrant. Remove from heat and allow the mixture to cool slightly (5-10 minutes).
  3. Prepare Dough for Filling: Separate the refrigerated biscuit dough into 8 individual biscuits. On a lightly floured surface, flatten each biscuit into a 10-12 cm (4-5 inch) circle using your hands or a rolling pin.
  4. Fill and Seal the Cheeseburger Bombs: Place approximately 30 mL (2 tablespoons) of the cooled beef mixture in the center of each dough circle. Top the beef with one cube of sharp cheddar cheese. Gather the edges of the dough around the filling, pinching them firmly together at the top to seal completely. Place the sealed bombs seam-side down on the prepared baking sheet, leaving space between each bomb.
  5. Apply Topping and Bake: In a small bowl, combine the melted butter with the 2 cloves of minced garlic and 15 g (2 tablespoons) of the grated Parmesan cheese. Brush the tops and sides of each cheeseburger bomb generously with this mixture. Bake for 15-18 minutes, or until the bombs are golden brown and puffed.
  6. Garnish and Serve: Remove from the oven and let cool for 5 minutes. While warm, sprinkle generously with the finely chopped fresh chives and a light dusting of the remaining Parmesan cheese. Serve immediately with your favorite dipping sauces.

Notes

These cheeseburger bombs are best enjoyed fresh out of the oven. If a seal breaks or a hole appears during filling, press a small piece of dough over it to patch the area before baking.
