- 400 g (14 oz) zucchini, spiralized
- 4 cloves garlic, minced
- 1 tbsp (15 ml) ginger, grated
- 2 tbsp (30 ml) soy sauce
- 1 tbsp (15 ml) sesame oil
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) lemon juice
- 1 tsp (5 g) lemon zest
- 1 tbsp (20 g) honey
- 2 green onions, sliced
- 1 tsp (3 g) sesame seeds
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Prepare the Glaze: Combine soy sauce, sesame oil, lemon juice, zest, honey, ginger, and red pepper flakes.
- Marinate Chicken: Season chicken with salt and pepper, then coat with 1 tbsp glaze.
- Cook Chicken: Stir-fry chicken in olive oil until cooked through.
- Sautรฉ Garlic: Sautรฉ minced garlic in olive oil until fragrant.
- Stir-Fry Zucchini: Stir-fry zucchini noodles and white parts of green onions until tender-crisp.
- Combine and Glaze: Return chicken to wok, add remaining glaze, and toss to coat.
- Serve: Garnish with green onions and sesame seeds.
