fresas con crema recipe with Pistachio Dusting
- Total Time: 55 minutes
- Yield: 4 servings 1x
- Diet: Vegetarian
Description
Fresas con crema with Pistachio Dusting is an easy, family-friendly Mexican dessert featuring ripe strawberries, creamy Mexican crema, and a crunchy pistachio topping. It’s a delightful, no-fuss treat perfect for busy weeknights or special occasions.
Ingredients
- 1 lb fresh strawberries, ripe and sweet (approx. 3–4 cups/450g)
- 1 cup Mexican crema or sour cream, full-fat (240ml) (plain Greek yogurt is an option)
- 2–3 tablespoons granulated sugar, for berries
- 1–2 tablespoons granulated sugar, for crema
- 0.5 teaspoon vanilla extract (2.5ml)
- 0.25 cup shelled unsalted pistachios (30g) (toasted almonds are an option)
Instructions
- Prepare Strawberries: Gently wash 1 lb (450g) fresh strawberries and hull them. Slice the berries in half or quarters, aiming for uniform pieces. Place sliced strawberries in a medium bowl and sprinkle with 2-3 tablespoons granulated sugar. Stir gently and let sit for 10-15 minutes; the berries will soften and release their sweet juices.
- Craft Creamy Base: In a separate bowl, whisk together 1 cup (240ml) Mexican crema (or sour cream), 1-2 tablespoons granulated sugar, and 0.5 teaspoon vanilla extract. Mix until the base is smooth and well combined, adjusting sugar if you prefer it sweeter.
- Make Pistachio Dusting: Finely chop 0.25 cup (30g) shelled pistachios using a chef’s knife or pulse them briefly in a small food processor until a coarse, sandy โdustโ forms (avoid over-processing into nut butter).
- Assemble and Chill: Gently combine the macerated strawberries with the creamy mixture in a large bowl. Spoon the mixture into individual serving dishes or a larger bowl. Cover and chill in the refrigerator for at least 30 minutes; this allows the flavors to truly meld and the dessert to firm up.
Notes
For dairy-free, use chilled coconut cream or plant-based sour cream. Reduce sugar or use natural sweeteners for low-sugar. Almonds or walnuts can replace pistachios. A pinch of cinnamon adds warmth. Always use the freshest strawberries. If berries are too watery, drain excess juice. If crema is too thick, whisk in a splash of milk or cream. If not sweet enough, add more sugar to taste.
