- 4 cups (450g) Baked Cake, from a 9×13 inch pan, cooled, crumbled
- 0.5 cup (120g) Cream Cheese Frosting, store-bought or homemade
- 30–40 count Lollipop Sticks
- 12 oz (340g) Strawberry Candy Melts
- 0.25 cup (40g) Confetti Sprinkles
- 1 tsp (5ml) Shortening or Coconut Oil, optional
Instructions
- Prepare Cake Base: Crumble cooled cake until fine. Mix with frosting until dough-like. Roll 30-40 1-inch balls smoothly. Chill for 30-60 minutes until very firm and solid.
- Melt Strawberry Coating: Gently melt strawberry candy melts in a microwave-safe bowl, stirring at 30-second intervals until smooth and like warm paint. If too thick, stir in 0.5-1 tsp shortening or coconut oil.
- Dip And Decorate: Dip a lollipop stick tip into melted candy, then insert halfway into a firm cake ball. Dip the pop into the coating, tapping gently to remove excess for an even shell.
- Add Confetti: While the strawberry shell is still wet, liberally sprinkle confetti. Place upright in a tall glass to set.
- Chill To Set: Return decorated cake pops to the fridge. Chill for 15-20 minutes until the coating feels firm to the touch, ready for serving.
