Ingredients
- 1 whole turkey (11–13 lb), thawed if frozen
- 0.25 cup olive oil, plus extra for rubbing
- 2 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 1 large onion, quartered
- 1 head garlic, halved horizontally
- 4 sprigs fresh rosemary
- 6 sprigs fresh thyme
- 1 cup vegetable stock or water
Instructions
- Prep Your Turkey: Remove turkey from packaging, taking out giblets and neck. Pat turkey extremely dry, inside and out, with paper towels. For ultimate crispiness, place turkey uncovered on a rack in a large roasting pan in the fridge overnight to air-dry.
- Season and Stuff: In a small bowl, combine 0.25 cup olive oil, 2 tablespoons kosher salt, and 1 tablespoon black pepper. Rub this mixture generously over the entire turkey, making sure to work some under the skin over the breast meat. Tuck wing tips under the body. Stuff cavities with the quartered onion, halved garlic head, 4 sprigs fresh rosemary, and 6 sprigs fresh thyme.
- Roast for Perfection: Preheat oven to 220C (425F). Pour 1 cup vegetable stock or water into the bottom of the roasting pan. Place turkey in the preheated oven. Roast for 30 minutes at 220C (425F) to crisp the skin. Reduce oven temperature to 175C (350F) and continue roasting for 2.5-3 hours, or until a meat thermometer inserted into the thickest part of the thigh registers 77C (170F).
- Basting and Browning: Baste the turkey every 45 minutes with the pan drippings. If the skin browns too quickly, loosely tent the turkey with foil to protect it.
- The All-Important Rest: Once the turkey reaches the target internal temperature, remove it from the oven. Tent it loosely with foil and let it rest for at least 30 minutes (up to 1 hour) before carving.

For ultimate crispiness, air-dry the turkey uncovered in the fridge overnight. Prepare the olive oil, salt, and pepper mixture a day ahead to save time. Use a remote meat thermometer for hands-off monitoring. Avoid not drying the skin thoroughly, overcooking, and carving immediately after roasting for the best results.
