Description

These Citrus Thyme Honey-Glazed Baked Pears are an elegant and comforting dessert featuring a delightful balance of sweet, salty, and tart flavors. Topped with a crunchy almond crumble, they’re perfect for any occasion.


Ingredients

  • 4 pears (800g) – Bosc or similar
  • 2 Tbsp (30ml) olive oil
  • 100g (3.5oz) feta cheese, crumbled
  • 1/2 cup (75g) cranberries, fresh
  • 2 Tbsp (30ml) honey, plus 1 Tbsp (15ml) for glaze
  • 1 tsp (5ml) thyme leaves, fresh
  • 1 tsp (5ml) orange zest
  • 1/4 tsp smoked paprika
  • 1 Tbsp (15g) butter, softened
  • 1 Tbsp (8g) flour
  • 1 Tbsp (12g) brown sugar
  • 2 Tbsp (15g) almond slivers, toasted
  • Pinch of salt
  • Pinch of black pepper
  • Mint leaves, for garnish

Instructions

  1. Preheat & Prepare: Preheat oven to 190°C (375°F) and line a baking sheet with parchment.
  2. Prepare Pears: Halve, core, and place pears skin-side down on the sheet.
  3. Season Pears: Brush with olive oil and season with salt & pepper.
  4. Make Honey Glaze: Combine honey, zest, thyme, and paprika; warm gently.
  5. Stuff & Assemble: Fill pear cavities with feta and top with cranberries.
  6. Glaze Pears: Drizzle with half the honey glaze.
  7. Initial Bake: Bake for 20-25 minutes, until tender.
  8. Make Crumble: Combine flour, sugar, almonds, and butter until crumbly; fold in cranberries.
  9. Add Crumble & Bake: Sprinkle crumble over pears and bake for 5 more minutes.
  10. Finish & Serve: Drizzle with remaining glaze, garnish with mint.

Notes

For best results, use firm but ripe pears. Toasting the almonds enhances their flavor. Feel free to experiment with different cheeses or nuts.
