cinnamon roll cake recipe With Cream Cheese Swirl Icing
- Total Time: 70 minutes
- Yield: 12–16 servings 1x
- Diet: Vegetarian
Description
This easy cinnamon roll cake delivers warm, gooey flavor with golden-brown edges and a creamy center, perfect for a family-friendly dessert without the fuss of traditional cinnamon rolls.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 0.5 cup unsalted butter, softened
- 2 large eggs, room temperature
- 0.5 cup whole milk
- 0.5 cup light brown sugar, packed
- 2 Tbsp ground cinnamon
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 2 tsp vanilla extract
- 2 tsp baking powder
- 0.5 tsp salt
Instructions
- Preheat Oven and Prepare Dish: Preheat oven to 350(degrees)F (175(degrees)C). Grease a 9×13 inch baking dish. Cream softened butter and sugar until fluffy, 2 minutes.
- Mix Batter: Beat in eggs one at a time, then vanilla extract. Gradually add whisked dry ingredients, alternating with milk, mixing until just combined and smooth. (If batter looks dry, add 1-2 Tbsp milk.)
- Make Cinnamon Swirl: Combine brown sugar and ground cinnamon in a small bowl until fragrant and crumbly.
- Layer Batter: Pour two-thirds of the batter into the prepared 9×13 inch dish, spreading evenly.
- Add Swirl Mix: Sprinkle the cinnamon-sugar mixture evenly over the batter. Dollop remaining batter over the cinnamon layer, gently spreading.
- Create Swirl: Use a knife or skewer to gently swirl through layers a few times for a marbled effect. (Don(t overmix!)
- Bake Cake: Bake for 30-35 minutes until edges are golden brown and a skewer comes out clean.
- Make Icing: While cake cools, beat softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
- Cool and Serve: Cool in dish 15-20 minutes. Generously spread icing over warm cake. Slicing when slightly warm enhances gooey texture.
Notes
For a vegan version, use egg substitutes, plant-based butter, non-dairy milk, and vegan cream cheese. To boost protein, add a scoop of unflavored protein powder to dry ingredients, adjusting liquid slightly. A shortcut is to skip the gentle swirl and just dollop the remaining batter on top.
