Ingredients
- 250g (2 cups) all-purpose flour
- 5g (1 tsp) baking soda
- 2g (ยฝ tsp) salt
- 2g (1 tsp) ground cinnamon + extra for topping
- 150g (ยพ cup) granulated sugar
- 80g (โ cup) unsalted butter, melted
- 340g (12oz) ripe bananas, mashed (3 large)
- 2 large eggs
- 5ml (1 tsp) vanilla extract
- 120g (ยฝ cup) softened cream cheese
- 60g (ยผ cup) powdered sugar
- 15ml (1 Tbsp) honey
- 30g (2 Tbsp) brown sugar, for topping
- 2g (1 tsp) ground cinnamon, for topping
Instructions
- Preheat & Prep: Preheat oven to 175ยฐC (350ยฐF), grease & line a loaf pan.
- Combine Dry: Whisk flour, baking soda, salt, and cinnamon.
- Mix Wet: Beat butter, sugar, bananas, eggs, and vanilla.
- Combine: Gently mix wet & dry ingredients until combined.
- Swirl Prep: Beat cream cheese, powdered sugar, honey, & cinnamon.
- Layer & Swirl: Layer batter, dollop swirl, and gently swirl. Repeat.
- Top & Bake: Sprinkle with brown sugar & cinnamon; bake 55-60 minutes.
- Cool: Cool in pan 10 minutes, then on a rack.
Notes
For best results, use very ripe bananas and softened cream cheese. Don’t overmix the batter to avoid a tough bread.
