- 100g (3.5oz) shredded mozzarella cheese (halal-certified)
- 1 tbsp (15ml) chipotle in adobo, minced
- 2 tbsp (30ml) fresh cilantro, chopped
- Zest of 1 small lime plus 1 tbsp (15ml) lime juice
- 2 tbsp (30ml) plain Greek yogurt (or plant-based yogurt)
- 1 tbsp (15ml) olive oil
- 0.5 tsp (2.5ml) smoked paprika
- 0.25 tsp (1.25ml) garlic powder
- Salt and pepper to taste
- 1 tbsp (15g) butter, softened (or plant-based butter)
- 0.25 cup (30g) toasted corn kernels for garnish
Instructions
- Make Cilantro-Lime Crema: Combine yogurt, lime zest, juice, cilantro, chipotle, paprika, garlic powder, salt, and pepper. Mix well.
- Mix Cheese Filling: Combine cheddar and mozzarella with minced chipotle.
- Assemble Burritos: Brush tortilla with butter, sprinkle with cheese, and add crema. Roll tightly.
- Grill to Perfection: Heat olive oil in a skillet. Grill burritos seam-side down for 3-4 minutes per side, pressing gently.
- Rest and Serve: Let rest for 2 minutes, slice diagonally, drizzle with crema, and sprinkle with corn.
