  • 2 Large Eggs: For binding.
  • 120ml (ยฝ cup) Milk: Whole or plant-based.
  • 60ml (ยผ cup) Olive Oil: Or neutral oil.
  • 150g (1 ยผ cup) All-Purpose Flour: Or whole wheat/gluten-free blend.
  • 1 tsp (5g) Baking Powder: Leavening agent.
  • ยฝ tsp (2.5g) Baking Soda: Leavening agent.

Instructions

  1. Preheat & Grease: Preheat oven to 190ยฐC (375ยฐF) and grease a 12-cup muffin tin.
  2. Prep Zucchini: Grate, salt, and squeeze zucchini to remove moisture.
  3. Combine Wet Ingredients: Mix chicken, eggs, milk, and oil.
  4. Whisk Dry Ingredients: Combine flour, baking powder, baking soda, salt, pepper, oregano, and chipotle powder.
  5. Combine Wet & Dry: Gently mix wet and dry ingredients until just combined.
  6. Fold in Cheese: Fold in cheddar and cream cheese.
  7. Make Chipotle Swirl: Combine cheddar, chipotle powder, and milk.
  8. Fill & Swirl: Fill muffin cups, add swirl, and gently swirl into batter.
