- 200g (7oz) Dried Egg Noodles or Flat Rice Noodles
- 2 Tbsp (30ml) Vegetable Oil
- 1 Medium Carrot, julienned
- 1 Red Bell Pepper, thinly sliced
- 100g (3.5oz) Snap Peas, trimmed
- 3 Cloves Garlic, minced
- 1 Tbsp (15g) Fresh Ginger, grated
- 3 Tbsp (45ml) Halal Mushroom Soy Sauce
- 1 Tbsp (15ml) Halal Mushroom Soy Sauce (for sauce)
- 1 tsp (5ml) Sesame Oil
- 3 Tbsp (45ml) Smooth Natural Peanut Butter
- 120ml (ยฝ cup) Coconut Milk
- 2 Tbsp (30ml) Fresh Lime Juice
- 1 tsp (5g) Lime Zest
- 1 tsp (5ml) Chili Paste (halal)
- 1 Tbsp (15ml) Honey
- 1 tsp (5ml) Rice Vinegar
- 1 Tbsp (15g) Toasted Coconut Flakes
- 2 Tbsp (8g) Chopped Fresh Cilantro
- 1 tsp (5g) Toasted Sesame Seeds
Instructions
- Cook Noodles: Boil noodles until *al dente*, drain, and rinse.
- Make Sauce: Whisk peanut butter, coconut milk, lime juice, zest, chili paste, honey, soy sauce, and vinegar until smooth.
- Stir-Fry Chicken: Stir-fry chicken until cooked through, then set aside.
- Sautรฉ Aromatics: Sautรฉ garlic and ginger until fragrant.
- Cook Vegetables: Stir-fry carrot, bell pepper, and snap peas until crisp-tender.
- Combine: Return chicken to wok with vegetables, soy sauce, and sesame oil.
- Add Noodles & Sauce: Add noodles and sauce, tossing to coat evenly.
- Plate & Garnish: Serve immediately, garnished with coconut flakes, cilantro, and sesame seeds.
