- 0.5 cup grated Parmesan cheese
- 2 Tbsp olive oil
- 1 tsp fresh thyme leaves, chopped
- 0.25 cup chicken or vegetable broth
Instructions
- Sear Chicken: Heat 1 Tbsp olive oil in a 10-inch skillet over medium-high heat. Season chicken; sear until golden brown, 3-4 minutes per side. Remove chicken to a plate.
- Sautรฉ Mushrooms: Add 1 Tbsp olive oil to the skillet. Sautรฉ sliced mushrooms, stirring, until tender and lightly browned, 5-7 minutes.
- Build Spinach Cream Sauce: Sautรฉ onion until softened (3 minutes). Stir in minced garlic and chopped thyme (1 minute, aromatic). Add spinach until wilted and bright green (2-3 minutes). Pour in broth and heavy cream, stir in Parmesan cheese. Simmer gently, stirring, until the sauce thickens and coats a spoon (3-5 minutes), becoming vibrant and creamy.
- Combine And Simmer: Return chicken and mushrooms to the skillet. Stir to coat. Simmer gently 5-7 minutes. Flavors will meld and chicken will finish cooking, becoming tender.
Notes
For a lighter sauce, substitute heavy cream with half-and-half or Greek yogurt. If the sauce is too thin, simmer uncovered an extra 2-3 minutes; if too thick, stir in a splash of warm broth or milk. Consider adding sun-dried tomatoes for extra zest.
