Description
This Cheesy Meatloaf Casserole combines savory ground beef with a spicy jalapeño cheese swirl and a sweet and smoky tomato-chipotle glaze for a comforting and flavorful weeknight meal. It’s a shareable dish perfect for the whole family.
Ingredients
- 500g (1.1lb) Ground Beef (Halal)
- 150g (1 cup) Finely Diced Onion
- 2 cloves Garlic, Minced
- 100g (1 cup) Panko Breadcrumbs
- 1 Large Egg, Lightly Beaten
- 150g (5.3oz) Shredded Cheddar Cheese (Halal-certified)
- 30g (2 tbsp) Grated Parmesan Cheese (Halal-certified)
- 30ml (2 tbsp) Milk
- 1 tsp (5ml) Worcestershire Sauce (Halal substitute)
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 0.5 tsp Smoked Paprika
- 100g (3.5oz) Softened Cream Cheese
- 50g (1.75oz) Shredded Smoked Mozzarella (Halal-certified)
- 1 Small Jalapeño, Finely Minced
- 1 tbsp (15ml) Chopped Cilantro
- 1 tsp Lime Juice
- 200g (7oz) Tomato Puree
- 2 tbsp (30ml) Honey or Maple Syrup
- 1 tsp Minced Chipotle in Adobo
- 1 tsp Apple Cider Vinegar
- 0.5 tsp Smoked Paprika (for glaze)
- Pinch of Salt (for glaze)
- 1 tsp Toasted Cumin Seeds
- 2 tbsp Chopped Cilantro Leaves
Instructions
- Preheat and Prep: Preheat oven to 180°C (350°F) and oil a 22 x 33 cm baking dish.
- Combine Meat Mixture: Gently mix ground beef, onion, garlic, breadcrumbs, egg, cheeses, milk, Worcestershire sauce, salt, pepper, and paprika.
- Make Cheese Swirl: Blend cream cheese, mozzarella, jalapeño, cilantro, and lime juice until smooth.
- Layer Casserole: Press half the meat mixture into the dish, top with cheese swirl, and cover with remaining meat.
- Prepare Glaze: Simmer tomato puree, honey, chipotle, vinegar, paprika, and salt until thickened.
- Glaze and Bake: Brush with glaze and bake for 35-40 minutes, until cooked through.
- Final Glaze & Rest: Brush with remaining glaze and rest for 10 minutes.
- Plate and Garnish: Plate, drizzle with glaze, and garnish with cumin seeds and cilantro.
Notes
For a milder spice level, remove the jalapeño seeds. Ensure cream cheese is softened for a smooth swirl. Don’t overmix the meat mixture to avoid a dense texture.
