  • 2 large Red Bell Peppers (โ‰ˆ300 g / 10 oz total), Roasted, Peeled, and Pureed
  • 120 ml (ยฝ cup) Heavy Cream
  • 2 Tbsp (30 ml) Fresh Basil Leaves, Finely Chopped
  • 2 Tbsp (30 g) Toasted Pine Nuts
  • ยฝ tsp (2.5 ml) Smoked Paprika
  • Salt and Pepper, to Taste
  • 1 cup (240 ml) Pasta Cooking Water, Reserved

Instructions

  1. Roast Red Peppers: Broil peppers until blackened, steam, peel, seed, and puree.
  2. Cook Linguine: Boil linguine until al dente, reserving 1 cup pasta water.
  3. Sautรฉ & Brown Beef: Sautรฉ garlic and onion, then brown ground beef with paprika.
  4. Create Cheesy Base: Toss linguine with butter, mozzarella, Parmesan, and pasta water.
  5. Combine Beef & Pasta: Mix browned beef into the cheesy linguine.
