Description

Ingredients
- 300g (2 1/2 cups) buckwheat flour
- 7g (2 1/4 tsp) active dry yeast
- 7g (1 tsp) fine sea salt
- 15g (1 Tbsp) honey or maple syrup
- 350ml (1 1/2 cups) warm water
- 45ml (3 Tbsp) extra virgin olive oil, divided
- 2 large onions (500g), thinly sliced
- 5g (2 Tbsp) fresh thyme leaves, finely chopped
Instructions
- Caramelize Onions: Heat 15ml olive oil in a skillet over medium-low heat. Add sliced onions and cook for 30-45 minutes until deeply golden brown and soft. Stir in thyme and cool completely.
- Activate Yeast: Combine warm water (105-115ยฐF), yeast, and honey in a bowl. Let stand for 5-10 minutes until foamy.
- Mix Dough: Whisk buckwheat flour and salt in a large bowl. Pour in the activated yeast mixture and remaining 30ml olive oil. Mix with a spatula until a sticky, batter-like dough forms.
- First Rise: Cover the bowl and let the dough rise in a warm spot for 1.5-2 hours, or until visibly puffy.
- Shape and Fold: Gently turn the dough onto a lightly floured surface. Pat it into a rectangle about 2cm thick. Spread the cooled caramelized onion mixture over two-thirds of the dough, leaving one long edge uncovered. Fold the uncovered section over the center, then fold the remaining third over to create layers.
- Second Rise and Preheat: Carefully transfer the dough to a parchment-lined loaf pan. Cover and let rise for 30-45 minutes. Preheat oven to 390ยฐF (200ยฐC).
- Bake Bread: Brush the top of the loaf with olive oil. Bake for 40-50 minutes until golden brown. If the top browns too quickly, tent loosely with foil.
- Cool Completely: Remove the bread from the oven and let cool in the pan for 10-15 minutes before transferring it to a wire rack. Allow it to cool completely before slicing to ensure proper crumb texture.
Notes
The dough will be very sticky and batter-like; avoid adding extra flour. Ensure the bread cools completely on a wire rack before slicing to prevent a gummy texture. The caramelized onions can be prepared up to three days in advance.
