- 0.5 cup (30 g) panko breadcrumbs
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30 ml) Dijon mustard
- 0.5 teaspoon (3 g) salt, plus more for seasoning
- 0.25 teaspoon (1 g) pepper, plus more for seasoning
Instructions
- Prep Lamb: Pat the lamb chops very dry with paper towels to ensure a better sear and crust adhesion. Season generously with salt and pepper on both sides, making sure they’re well-coated.
- Make Crust: In a food processor, combine pistachios, fresh mint, minced garlic, panko breadcrumbs, a drizzle of olive oil, a pinch of salt, and pepper. Pulse until a coarse, sticky mixture forms.
- Apply Crust: Lightly brush both sides of each lamb chop with Dijon mustard. Firmly press the mint pistachio crust mixture onto one side of each chop, ensuring a good, even coating that sticks well (If the crust isn’t adhering, add 0.5 teaspoon more olive oil to the mixture and re-pulse).
- Bake Chops: Place the crusted lamb chops on a wire rack set over a baking sheet (crust side up). Bake in a preheated oven at 400ยฐF (200ยฐC) for 15-20 minutes, or until the internal temperature reaches 130-135ยฐF (54-57ยฐC) for medium-rare to medium. The crust should be golden and fragrant.
