Description

This homemade version of the Arby’s Beef and Cheddar sandwich features thinly sliced roast beef on an onion bun, smothered in a luscious, smoky cheese sauce made with smoked paprika and roasted red pepper puree.

  • 4 onion buns, split
  • 45 g (3 tablespoons) unsalted butter
  • 30 g (1/4 cup) all-purpose flour
  • 360 ml (1.5 cups) whole milk
  • 280 g (2.5 cups) sharp cheddar cheese, shredded
  • 2 tablespoons roasted red pepper puree
  • 1 teaspoon smoked paprika, plus extra for garnish
  • 0.5 teaspoon chipotle powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.5 teaspoon fine sea salt, or to taste
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons fresh flat-leaf parsley, finely chopped, for garnish

Instructions

  1. Prepare the Roux Base: In a medium saucepan, melt the 45g (3 tablespoons) of butter over medium heat. Whisk in the 30g (1/4 cup) of all-purpose flour and cook for 1-2 minutes, stirring constantly, to create a light roux.
  2. Complete the Cheese Sauce: Gradually whisk in the 360 ml (1.5 cups) of whole milk until smooth, continuing to whisk as it thickens over 3-5 minutes. Reduce heat to low, then add the shredded cheddar cheese, roasted red pepper puree, 1 teaspoon smoked paprika, chipotle powder, garlic powder, onion powder, salt, and black pepper. Stir continuously until the cheese is completely melted and the sauce is smooth and creamy. Keep the sauce warm over very low heat.
  3. Warm Beef and Toast Buns: Gently warm the thinly sliced roast beef by heating it in a microwave-safe dish for 30-60 seconds or quickly steaming it over simmering water. Toast the cut sides of the onion buns using a toaster, dry skillet, or grill until golden brown and crisp.
  4. Assemble Sandwiches and Garnish: Place the bottom halves of the toasted buns on plates and pile a generous amount of warm roast beef onto each one. Liberally spoon the cheese sauce over the roast beef. Place the top halves of the buns on top, then garnish with chopped fresh parsley and a light dusting of extra smoked paprika over the top bun and exposed sauce.
