  • 500 g halal ground beef
  • 2 tbsp vegetable oil

  • 30 g all-purpose flour
  • 500 ml low-sodium vegetable broth
  • 250 ml whole milk
  • 200 g sharp cheddar cheese, shredded
  • 150 g Gruyรจre cheese, grated
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 0.5 tsp ground black pepper
  • Salt to taste
  • 120 ml apricot preserves (no added sugar)
  • 2 tbsp honey
  • 1 tbsp freshly grated ginger
  • 1 tsp Dijon mustard
  • 0.25 tsp ground cinnamon
  • 30 g sliced almonds
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare Potatoes: Peel and thinly slice potatoes; blanch for 3 minutes, then drain.
  2. Sautรฉ & Brown: Sautรฉ onions, carrots, and celery for 5 minutes; brown ground beef and season with herbs.
  3. Create Sauce: Make a roux with butter and flour; whisk in broth and milk; simmer until thickened.
  4. Incorporate Cheese: Stir in cheddar and Gruyรจre until melted and smooth.
  5. First Layer: Arrange half of the potatoes in a baking dish.
  6. Layer One: Pour half of the sauce over potatoes; drizzle with half of the apricot-ginger glaze.
  7. Second Layer: Layer remaining potatoes on top.
  8. Layer Two: Pour remaining sauce over potatoes; drizzle with remaining glaze.
  9. Cheese Topping: Sprinkle with remaining cheese.
  10. Bake: Bake covered for 30 minutes, then uncovered for 15-20 minutes, until bubbly and golden.
  11. Rest & Garnish: Rest for 10 minutes; garnish with toasted almonds and parsley.
