Description

This Shepherd’s Pie elevates a classic comfort food with a rich ground beef base, fluffy mashed potatoes, and a vibrant garlic chive cream cheese swirl. Served with a sweet caramelized onion jam, it’s a hearty and satisfying meal.


Ingredients

  • 500g ground beef, halal recommended
  • 150g onion, diced
  • 150g carrots, diced
  • 150g frozen peas
  • 2 cloves garlic, minced
  • 30ml olive oil, divided
  • 30g tomato paste
  • 240ml beef or vegetable broth
  • 5ml soy sauce
  • 5g dried thyme
  • 5g dried rosemary
  • Salt and pepper to taste
  • 900g potatoes, peeled and cubed
  • 60g butter or plant-based butter
  • 120ml milk or plant milk
  • 100g cream cheese, softened, halal-certified
  • 30g fresh chives, chopped
  • 1 clove roasted garlic, mashed
  • 200g onion, thinly sliced
  • 15ml balsamic vinegar
  • 5g brown sugar
  • Pinch of salt (for jam)

Instructions

  1. Sauté Vegetables: Sauté diced onion and carrots in olive oil until softened.
  2. Brown Beef & Bloom Garlic: Brown ground beef, then stir in minced garlic.
  3. Simmer Filling: Add tomato paste, soy sauce, thyme, rosemary, broth, salt, and pepper; simmer until thickened.
  4. Add Peas: Stir in frozen peas and remove from heat.
  5. Cook Potatoes: Boil cubed potatoes until tender.
  6. Mash Potatoes: Mash potatoes with butter and milk until smooth.
  7. Make Cream Cheese Mash: Fold cream cheese, roasted garlic, and chives into half of the mashed potatoes.
  8. Assemble Pie: Spread meat filling in a baking dish, top with plain mashed potatoes.
  9. Swirl Mash: Dollop green mash and swirl into the plain mash.
  10. Bake: Bake at 200°C (400°F) for 25-30 minutes, until golden and bubbly.
  11. Make Onion Jam: Caramelize sliced onion in olive oil, then add balsamic vinegar and brown sugar; simmer until jammy.
  12. Rest & Serve: Let rest for 5 minutes before serving.

Notes

For extra fluffy mashed potatoes, use a potato ricer. Slow-cooking the onions for the jam is key to developing a deep, sweet flavor.
