Ingredients

  • Chicken Breasts (600g / 20oz): 2 boneless, skinless breasts
  • Olive Oil (5 tbsp / 75ml): Extra virgin
  • Lemon Juice (3 tbsp / 45ml): Freshly squeezed
  • Garlic (3 cloves): Minced
  • Dried Oregano (1 tsp / 5ml)
  • Salt & Pepper: To taste
  • Romaine Lettuce (1 large head / 200g / 7oz): 1 head, crisp
  • Parmesan Cheese (ยผ cup + 2 tbsp / 40g): Grated
  • Anchovy Paste (1 tsp / 5ml)
  • Dijon Mustard (1 tsp / 5ml)
  • Egg Yolk (1 large)
  • Jasmine Rice (1 cup / 200g / 7 fl oz): Cooked and cooled
  • Vegetable Oil (2 tbsp / 30ml): For frying
  • Plain Greek Yogurt (ยฝ cup / 120g / ยฝ cup): Full-fat
  • Smoked Paprika (ยฝ tsp / 2.5ml)
  • Lime Zest (1 tsp / 5ml)
  • Lime Juice (1 tbsp / 15ml): Freshly squeezed
  • Honey (1 tsp / 5ml – optional)
  • Pine Nuts (1 tbsp / 15g): Toasted
  • Fresh Parsley (1 tbsp / 5g): Chopped

Instructions

  1. Marinate Chicken: Combine olive oil, lemon juice, garlic, oregano, salt, and pepper; coat chicken and refrigerate for 30-240 minutes.
  2. Prepare Rice: Spread cooled rice on a baking sheet, chill for 20 minutes, and cut into squares.
  3. Fry Rice: Fry rice squares in vegetable oil until golden and crispy.
  4. Make Dressing: Whisk egg yolk, lemon juice, mustard, anchovy paste, and garlic; slowly drizzle in olive oil, then add Parmesan and pepper.
  5. Make Drizzle: Combine yogurt, smoked paprika, lime zest, lime juice, honey (optional), olive oil, and salt.
  6. Grill Chicken: Grill chicken for 5-6 minutes per side, until cooked through (165ยฐF / 74ยฐC).
  7. Assemble Salad: Toss romaine with dressing, add chicken, rice, and Parmesan.
