- 600 g carrots, peeled and sliced
- 300 g celery stalks, sliced
- 300 g onions, diced
- 500 g halal ground beef
- 2 tbsp vegetable oil
- 30 g unsalted butter
- 30 g all-purpose flour
- 500 ml low-sodium vegetable broth
- 250 ml whole milk
- 200 g sharp cheddar cheese, shredded
- 150 g Gruyรจre cheese, grated
- 1 tsp dried thyme
- 1 tsp dried sage
- 0.5 tsp ground black pepper
- Salt to taste
- 120 ml apricot preserves (no added sugar)
- 2 tbsp honey
- 1 tbsp freshly grated ginger
- 1 tsp Dijon mustard
- 0.25 tsp ground cinnamon
- 30 g sliced almonds
- 2 tbsp fresh parsley, chopped
Instructions
- Prepare Potatoes: Peel and thinly slice potatoes; blanch for 3 minutes, then drain.
- Sautรฉ & Brown: Sautรฉ onions, carrots, and celery for 5 minutes; brown ground beef and season with herbs.
- Create Sauce: Make a roux with butter and flour; whisk in broth and milk; simmer until thickened.
- Incorporate Cheese: Stir in cheddar and Gruyรจre until melted and smooth.
- First Layer: Arrange half of the potatoes in a baking dish.
- Layer One: Pour half of the sauce over potatoes; drizzle with half of the apricot-ginger glaze.
- Second Layer: Layer remaining potatoes on top.
- Layer Two: Pour remaining sauce over potatoes; drizzle with remaining glaze.
- Cheese Topping: Sprinkle with remaining cheese.
- Bake: Bake covered for 30 minutes, then uncovered for 15-20 minutes, until bubbly and golden.
- Rest & Garnish: Rest for 10 minutes; garnish with toasted almonds and parsley.
